Barklands BBQ - The Highland Clans

Guardians of the Flame

Beyond the misty glens and heather-covered hills lies the Barklands: a proud realm of Highland hounds, ancient clans and fiercely guarded family recipes. Each clan brings its own character to the fire, and its own bold flavor.

How to use a dry rub

How much rub do I use?

About a tablespoon per pound of meat. Pat the meat dry, coat it evenly and press the rub in.

When should I season?

For ribs, brisket and pork shoulder, rub the night before and refrigerate. For steaks, chicken and seafood, 30 to 60 minutes ahead is plenty.

Will sweet rubs burn on the grill?

Rubs with honey or sugar can char over high direct heat. Cook over indirect heat and finish over the flames.

All Bark. All Bite. All Flavor.

  • A clan for every cut

Beef, pork, poultry, seafood and fries all have a guardian.

  • Pairs with Purrshire

A long smoke goes better with a pot of the Admiral’s espresso roast.
